INGREDIENTS
- Full cream milk – 1 litter
- Sugar – 1/4-1/3 cup
- Cardamom powder – 1/2 tsp
- Saffron strands – 10-12
- Almonds – 2 tbsp
- Pistachios – 2 tbsp
- Rose water – 1 tsp (optional)

DIRECTIONS FOR RABRI:
Take a wide pan and pour milk in it. Bring the milk to a good boil. Make sure that gas is on low flame in all this process of making rabri. Boil the milk until it became half in the quantity.
Now scrape the collected malai on the milk to the sides and stir it very well. Keep on stirring the milk and pushing the malai to the sides until it reaches the perfect thickness. Keep doing this process on low flame to prevent milk from sticking to the surface.
Once the milk reaches the desired thickness and creamy texture add sugar, cardamom powder in it and keep on stirring until the sugar is dissolved properly. After that add chopped almonds and pistachios into the rabri and mix them well. Sprinkle some saffron strands this will give good color to the rabri.
For good fragrance and nice flavor add bit of rose water or rose essence in rabri and again mix it well. This step is completely optional.
Transfer the creamy rabri into the bowl and let it cool down completely. You can also serve it warm or cold as you prefer to eat.
