Quick and easy recipe for crispy and tasty jalebi at home. Less ingredients needed. Market style jalebi… Loved by all. Best for small gatherings and for festival functions. Step by step guide will be provided.
INGREDIENTS
- All purpose flour – 1 cup
- Besan – 2 tbsp
- Yogurt/curd – 1/2 cup
- Baking soda – 1/2 tsp
- Sugar – 1.5 cups
- Water – 1 cup
- Green cardamon – 2-3
- A few strands of kesar
- Ghee/Oil for frying

DIRECTIONS:
STEP 1 PREPARE BATTER
Pour Maida (All purpose flour) in a large bowl along with besan and yogurt/curd. Mix them properly; make sure that there are no lumps.
Now add some water in it and mix them nicely until it became a smooth batter. Batter should be not too thick and not too runny.
Keep them aside for 4-6 hours so that it get fermented, after that add baking soda in it.
STEP 2 MAKE SUGAR SYRUP
Boil Sugar along with some water in a pan. Once the sugar is dissolved properly then add green cardamom, few strands of saffron in it. Boil it until it reaches the one string consistency.
STEP 3 FRY JALEBI
Put some ghee or oil in a kadhai or pan until its enough hot for frying (Ghee will be recommended for good taste). Pipe the batter into a jalebi bottle or muslin cloth with a little hole. Put the batter in ghee in spiral shapes. Fry them until they are crispy and golden brown from both the sides.
STEP 4 SOAK IN SYRUP
Dip the fried jalebis into the warm sugar syrup for 1-2 minutes. Make sure that jalebis are dipped properly and covered with the syrup. Now remove the jalebis from the syrup and drain them. Serve them hot.
