Perfect malpua recipe.. festive special.. quick and easy to make.

INGREDIENTS

  • Sooji – 1/4 cup
  • Wheat flour/ atta – 3/4 cup
  • Cardamom powder – 1/4 tsp
  • Fennel powder – 1/2 tsp
  • Milk – 1.5 cup
  • Malai / fresh cream – 2 tbsp
  • Sugar – 1 cup
  • Water – 1 cup
  • Saffron
  • Oil or Ghee

DIRECTION for malpua:

To make malpua firstly you need to grind the sooji finely. Once it is grinded now add atta, fennel powder, cardamom powder in it and we will grind them again so that they get mixed. Now add milk and malai in that grinder again grind them and make a smooth lump free batter. Batter must be smooth and flowy. Keep it aside for sometime and let it rest.

Now for sugar syrup we will add sugar along with same quantity of water in a pan. Add saffron strands that will give a beautiful color to the syrup. Let the syrup boil and turn off the flame when the sugar is dissolved properly. Keep in mind that we don’t need one strand consistency we just need sticky sugar syrup. Boil the syrup minimum for 15 minutes.

Now we will fry the malpua for that head some oil or ghee in a pan. while it is heating just stir the batter for 1-2 minutes this will fill the air in batter and the malpua will be soft when cooked. Take one ladle of batter and pour that in the hot ghee or oil; pour the batter in one flow. You will notice that the batter will take round shape on its own. Once you notice that top part of the malpua is slightly hard then flip it. We will let it get crisp. With same process make more malpua.

Now we will dip the malpua in sugar syrup. flip the malpua for 2 -3 times and then take them out. Now serve them with rabri or as you prefer.
