Tasty market style kheer recipe which is easy and quick to make..
INGREDIENTS
- Basmati rice – 1/4 cup soaked
- Full cream milk – 1 liter
- Dried rose petals (optional)
- Sugar – 5 tbsp
- Almonds – 1 tbsp
- Pistachios – 1 tbsp
- Green cardamom powder – 1/2 tsp
- A pinch of saffron

DIRECTIONS FOR KHEER:
STEP 1 PREPARE RICE:
Soak the rice for 20-30 minutes after that drain them. You can also crush the rice grain slightly with your fingers or with spatula. This technique will make the kheer more creamier and textured.
STEP 2 BOIL MILK:
Clean a large Patila with some water (this help to prevent milk from sticking to the sides). Then pour the milk in the patila on a medium flame and bring it to a good boil.
STEP 3 COOK RICE:
Once the milk is boiled, simmer the heat and slow add the rinsed rice into the milk. At simmer or low heat; stir it every 2-3 minutes to ensure that rice don’t stick to the bottom. You must stir it slowly and gently.
Cook until the rice is completely soft and mashed; till that time the milk will also be reduced and thickened. You will reach this stage and consistency almost 30-40 minutes of cooking them.
STEP 4 ADD OTHER INGREDIENTS:
After that add sugar, cardamom powder, saffron strands, sliced almonds and crushed pistachios. Stir them well and nicely for next 5-6 minutes. Make sure the sugar is dissolved properly and kheer reaches a thick creamy consistency. Kheer will get more thickened upon cooling. You can also store the kheer in fridge after almost 30 minutes of removing it from stove.
Serve it warm or chilled as you prefer. Garnish it with some dried rose petals and with some extra chopped nuts or dry fruits.
